Chef Uno's Zesty Spring Chicken Salad

Freshen up your recipe book with this great springtime salad. Chef Uno shares her recipe for a Zesty Spring Chicken Salad with homemade dressing.

 

Zesty Spring Chicken Salad

1     cup            spring salad mix

1/2  cup            rotisserie chicken (shredded)

1/4  cup            roasted corn

1/4  cup            sliced snow peas
1/4  cup            shredded carrots

1/4  cup            sliced red radishes coins

1/4  cup            sliced cucumber coins

1/4  cup            orange segments
1/4  cup            fried wonton strips

Special tool: 4″ ring mold

 

Dressing

1/2    cup            fresh orange juice

1       teaspoon    orange zest

1       clove          garlic finely chopped

2       teaspoon    honey

2       teaspoon    red wine vinegar

2       teaspoon    dijon mustard

2       tablespoon  olive oil

salt and pepper to taste

 

Instructions: Place all ingredients of dressing in to a mason jar and shake  for 1 minute.

In a mixing bowl, combine salad mix, chicken, corn, snow peas, carrots, desired amount of dressing and toss until well coated. Place ring mold onto the middle of the serving plate.  To build the salad, place an even layer of cucumbers on the bottom, top with 1 1/2 cups of salad mixture, layer radish coins, 3-4 orange segments and a handful of wonton strips. Pull the mold up and enjoy.
