Dominate Bruch With Chicken Chilaquiles

Here the recipe from Chef Uno:


Chicken Chilaquiles



5        each           corn tortillas (quartered)

2        cups           vegetable oil

1        cup            favorite salsa


1        cup            roasted chicken breast (shredded)

1/2     cup            Oaxaca cheese

4        each           eggs

2        tablespoon  cotija cheese


Heat medium stock pot with oil to 350 degrees. Drop quartered tortilla slices into the oil.  Once crisp, 1-2 minutes, remove from oil and drain on paper towel. In a saute pan, place half the tortilla chips in the pan with 1/2 cup of salsa and chicken and toss until chips are coated. Place mixture into shallow bowl and top with Oaxaca cheese. Place the pan back on the stove and fry two eggs, sunny side up or desired preference. Place on top of cheese and tortilla mixture and top with cotija cheese.
