Try This Fried Chicken Sandwich For National Fried Chicken Day

Fried chicken is crispy golden goodness sent from the heavens above. If you're looking for an easy way to whip some up homemade, you've got to try Chef Uno's Fried Chicken Sandwich with Avocado Yogurt Sauce.

Ingredients:

2                                      chicken breast (halved horizontally)

1           cup                      buttermilk

2           cups                    coconut oil

2                                      eggs

1           cup                      flour

½          cup                      cornstarch

1           teaspoon              salt

½          teaspoon              black pepper

1           teaspoon              paprika

½          teaspoon              garlic powder

½          teaspoon              onion powder

1                                     avocado

1           tablespoon           lime juice

½          cup                     Greek yogurt

1                                     tomato, sliced

4                                     bibb lettuce leaves

4                                     buns

 

Directions:

Marinade chicken with buttermilk and a teaspoon of salt for two hours up to overnight. When ready to fry, heat coconut oil in stockpot at 350 degrees. In a shallow bowl, mix flour, cornstarch, salt, pepper, paprika, garlic powder and onion powder. In a separate bowl, beat two eggs. Remove chicken from marinade and coat with flour mixture, then coat with egg mixture and back into flour mixture, shake off excess flour.  Fry for 5-7 minutes or until chicken has an internal temperature of 180 degrees. Remove from pan and allow to drain on rack or paper towel. While chicken is frying, place avocado, Greek yogurt, lime juice and ½ teaspoon of salt into blender and puree until it becomes smooth and has the texture of mayonnaise. Toast the buns with a little butter and then assemble the fried chicken sandwich. Spread the avocado cream on both sides of the bun, add the bib lettuce, fried chicken, two slices of tomatoes and bun top. Enjoy! Make this and share it on Facebook and Twitter using #ChefUno!
