Chef Uno cooks up some savory chicken lollipops that will have your taste buds dancing for joy!

Here's the recipe!

Chicken Lollipops Ingredients:

3     pounds            chicken wings (cut at joints and tips discarded)
2     cups                sugar
2     cups                fish sauce
2     cups                water
3     tablespoon       garlic (chopped)
1     tablespoon       ginger (chopped)
1     cups                cornstarch
4     cups                vegetable oil
2     tablespoon       sambal (Asian chili paste)
1/3  cup                  rice wine vinegar
1     tablespoon       cilantro (chopped)
1     tablespoon       green onion (sliced)

Create a brine and chili sauce by placing sugar, fish sauce and water into large mixing bowl and stir until sugar is dissolved. Put chicken wings in Ziploc bag along with half of the fish sauce mixture, 1 tablespoon garlic and ginger. Put chicken in the refridgerater for 3 hours up to overnight. Place the remaining fish sauce mixture in a stock pot at medium high heat until it reduces to half, this will take 15-20 minutes. Once the consistancy is similar to maple syrup, add sambal (adjust to spice preference) and rice wine vinegar. Set aside until ready to use. Heat oil to 350 degrees. Fry remaining 2 tablespoons of garlic until golden brown and crisp, remove from oil and drain on towel. Once chicken is ready to fry, pat wings dry and dredge in corn starch. Fry 5-6 wings at a time so oil temperature does not drop drastically. Remove wings from oil and into a bowl, toss with chili sauce, garlic chips, cilantro and green onions.

Cheers to eating deliciously,

Chef Uno
