Bacon Fat Fried Rice

It's time to up your fried rice game.


Oh, you know, by cooking it in bacon fat! Let Chef Uno show you the way to a new world of bacon-grease-filled wonder.

Bacon Fat Fried Rice Ingredients:

2 cups cooked rice, leftover from the day before or refrigerated for at least 2 hours
1/4 pound diced bacon
1 cloves garlic, zested
1/2 inch ginger, zested
1/4 cup yellow onion, diced
1 cups frozen corn, carrot and peas combination
2 eggs
1 tablespoons oyster sauce
1 tablespoons soy sauce
1/4 cup sliced cilantro
1/4 cup sliced green onions
Salt & pepper to taste

Break up large clumps of rice and separate the grains with wet fingers. Pre-heat a 14-inch wok or 12-inch skillet over high heat for about 1 minute, add the bacon until it becomes crisp. Remove bacon pieces on a separate plate. Reduce heat to medium, retain 3 tablespoons bacon fat, add garlic, ginger and onion and stir until aromatic, about 15 to 30 seconds. In the same pan, add egg, scramble and set aside with your cooked bacon. In the same pan, add the corn, carrots and peas and cook until tender, about 1-2 minutes. Add the rice, soy and oyster sauce until it it thoroughly mixed. Once mixed, add back the bacon and eggs and toss. Season with salt and pepper to taste. Once all the rice is well-coated and heated through, top with cilantro and green onions. Serve immediately.
