If you have a sweet tooth like Eye Opener's Hilary Kennedy, then you'll love the wayJon Thompson, chef and partner at Sugarbacon Proper Kitchen ,takes regular old banana pudding and makes it a little more adult with some butterscotch.

Here's how you can do it at home:

First take caramel consisting of brown sugar and water and add to it milk, cream, corn starch, three egg yolks, one whole egg, butter and rum.  Yes, rum.

Spoon that pudding mixture into a glass jar, set it aside, and move on to the banana layer.

For the banana part, start with a pound of butter and two pounds of brown sugar.  Then after stirring add in two cups of rum (yes, two whole cups).  Finally, drop in the bananas and stir it all up.

Let it cool and then add it on top of the pudding you already put in jars.  Then top the whole thing with whipped cream and a shortbread crumble and dig in!
