Chef Uno’s Mexican Breakfast Tostadas

It is National Breakfast Month and to honor this momentous occasion, Oliver Tull stopped by Chef Uno's kitchen for some delicious Mexican Breakfast Tostadas. Watch the clip above to see how it's made and check out the recipe below.

Mexican Breakfast Tostadas

4         each               corn or flour tortillas

1         cup                 vegetable oil

1         cup                 Oaxaca cheese (or mozzarella)

4         each               eggs

1         cup                 roasted salsa

2         tablespoons      chopped cilantro

2         tablespoons      diced red bell pepper

1         cup                          Cotija cheese (or feta)

Salt and pepper to taste


In a non-still skillet, place 1/2 cup of oil and heat to medium-high temperature. Place two tortillas and fry for 1 minute on each side. Once both sides have been fried, layer 1/4 cup of cheese on top of each tortilla. In another skillet, fry two sunny side eggs to your desired done"ness". Place an egg on top of each tortilla and repeat until all tortillas are complete. To plate, top each egg with salsa, cilantro, bell pepper, cotija cheese, salt and pepper.
