I bet you didn't know September 16 is National Guacamole Day! Here at EyeOpener we like to celebrate these random holidays with style. So, Oliver Tull hung out with Chef Uno while she made guacamole with an Asian twist. It's called Yuzu Guacamole. Check out the video above!
3 each ripe avocado (diced into 1/2 inch cubes)
2 tablespoon sliced cilantro
1 tablespoon diced white onion
1 tablespoon jalapeño (seeded and diced)
1 tablespoon red bell pepper (seeded and diced)
2 tablespoon yuzu juice (lime juice)
Salt & black pepper to taste
In a mixing bowl, add all ingredients and gently toss. If not serving immediately, cover with plastic wrap so skin doesn't form and refrigerate. Serve along side your favorite chips, vegetables or tacos.
