Make Deviled Green Eggs and Ham for St. Patrick’s Day

It's St. Patrick's Day and in honor of the Irish holiday, Chef Uno shared her recipe for deviled green eggs and ham.

That's right. These aren't your kindergartener's green eggs and ham. This is for serious foodies only. Check out Chef Uno's recipe below and see how it all comes together in the video above.

Green Eggs and Ham

6 each boiled eggs
2 ripe avocados
1 tablespoon lime juice
1/2 teaspoon salt 
1 tablespoon mayonnaise
1 tablespoon finely chopped cilantro
1 teaspoon finely chopped jalapeno 
1 teaspoon paprika
8 ounces prosciutto ham

1) Carefully peel the hard boiled eggs and cut them in half lengthwise. Place them on a serving platter. Scoop out the cooked yolks and set aside.
2) Cut the avocados in half. Remove the pit. Scoop out the avocado flesh and place in a bowl. Roughly mash with a fork. Use your fingers to break up two of the cooked egg yolks over the mashed avocado, add in salt, lime, chopped cilantro, and jalapeño. Mix until well combined and place mixture into ziplock bag until ready to pipe into egg whites shells.
3) Place prosciutto ham in a pan on medium high heat and allow to crisp up like bacon. Drain on paper towel and break into 1" pieces to garnish eggs.
4) Pipe 2 tablespoon of avocado mixture into each well of the hard boiled egg whites. Top with a piece of prosciutto and a pinch of paprika.
